Blue Cheeses

Blue cheeses are distinguished by their strong slightly salty flavor and blue-green color. The blue green color present in different types of blue cheese is due to the blue-green mold that is added to the cheese. Blue cheeses are semi-soft cheeses.

Stilton blue cheese is one of the best brands of blue veined cheese and is known for its quality. Roquefort, Maytag Blue Cheese, Gorgonzola, Berkshire Blue Cheese, Deep Ellum Blue and Cabrales are also regarded as some of the best types of blue cheese.

The farm is located in Iowa. If the name seems familiar, it's with good reason, since the farm is near to the Maytag appliance factory.

Making Blue Cheese

Blue veined cheese is started with regular cheese curds. A mold, such as Penicillium, is added to the new cheese curds from an uncontaminated blue cheese.

When making blue cheese, consider carefully which cheese you will take the mold from. The cheese from which the mold is taken should have a flavor that you want in the blue cheese you are making.

Blue Cheese Calories

Blue cheese calories amount to about 60 calories per serving. Blue cheese calories come from a food that is high in sodium and high in saturated fat. One serving contains around 3.6 grams of protein and supplies 9% of the recommended daily allowance for calcium.

I have to agree, Marie's does make some of the best blue cheese dressing. And my next favorite is Ken's. I haven't tried Bob's Big Boy, but I will keep an eye out for it.
